Fall is one of my FAVORITE seasons for many reasons...but to name just one, I LOVE all the recipes! You can make so many yummy dishes and desserts! Even better, we didn't even have to drive down to the Farmer's market. When we moved to our new house, we inherited two peach trees, 2 apple trees, and a plum tree. We have made apple crisp, peach crisp, cobbler, and plum jam. The kids love to help pick the fruit because then they get to taste the yummy results of their harvest. They especially loved this peach crisp we made the other day- it was SO good! I really liked the crumb topping, because sometimes crumb toppings end up being too runny or too hard...this one was just right!
Fruit Mixture
6 cups fresh or frozen sliced peeled peaches,
thawed (8 to 10 medium)
1 teaspoon cinnamon, if desired
(I even added extra cinnamon, a drizzle of maple syrup, and mixed it in with the peach mixture)
Topping
1 cup rolled oats
3/4 cup all-purpose flour
3/4 cup firmly packed brown sugar
1/2 cup margarine or butter, softened
1. Heat oven to 375 degree F. Place peaches in ungreased 12 x 8-inch (2-quart) baking dish. Sprinkle with cinnamon.
2. In large bowl, combine all topping ingredients; mix until crumbly Sprinkle crumb mixture evenly over peaches.
3. Bake at 375 degree F. for 25 to 35 minutes or until peaches are tender and topping is golden brown. If desired, serve warm with cream, ice cream or whipped cream.
