My cousin Claudia gave me the following recipe for Autumn apple cider stew, it is SO GOOD! Last night my mom, dad, and sisters came over for soup and movies. We dished the stew into soup bowls. This autumn stew has the sweetest yummy flavor and the apple juice makes the meat so moist and delicious! I actually doubled the juice to stretch it a little further and it turned out a little less "stewy" but still tasted delicious!
2 lbs stew meat 1/4 c. flour
3 TBL oil salt, pepper
1/2 tsp thyme
carrots, potatoes, celery, onion, 1 apple
2 c. apple juice or cider
1 TBL apple cider vinegar
1/2 c. cold water, 1/4 c. flour
Brown meat in oil, drain, toss in 1/4 c. flour mixed with thyme, salt and pepper (I also salt and pepper meat as it is cooking). Place chopped vegetables in pot with meat on top. Combine apple juice and vinegar, pour over meat. Cover, cook on low til vegetables are tender. Turn heat to high. Blend flour and cold water to make a paste/thicken, stir into stew until thickened. Season to taste.
