PB & J French Toast Sticks (Milton's)

We all know PB&J is a kid favorite but this delightful French toast is bound to be everybody’s but Maya's favorite. She is more of an eggs, bacon, and toast type of girl. I think she hates the syrup and texture of pancakes and french toast. She must of inherited that from her Aunt Cynthia because it surely did not come from me or her dad!
Anyway, this is super simple to make and it has ingredients you probably have on hand. You’ll surely have time to make it even on busy mornings. We’re making ours skinny(because we aren't)by using whole wheat bread, natural unsalted peanut butter, reduced-sugar preserves and egg whites. A real satisfying breakfast with 5 Weight Watchers POINTS PLUS. Serve with some fresh berries or sliced fruit.

Ingredients:

4 slices whole-wheat sandwich bread, we like Milton’s multi-grain bread.

4 tablespoons natural unsalted chunky or smooth peanut butter. I buy mine at Walmart and the brand is actually called "Natural" with flax seed added for extra fiber and nutrients.

2 tablespoons reduced-sugar strawberry preserves or your favorite homemade jam. We didn't do strawberry freezer jam this year and that's my favorite, but our peach freezer jam is still pretty tasty!

4 egg whites

1 tablespoon fat-free milk

½ teaspoon vanilla

4 teaspoons reduced-fat butter or Smart Balance Light (We like "I Can't Believe It's Not Butter" brand.

2 teaspoons powdered sugar

Instructions

1. Spread 1 tablespoon peanut butter on 2 slices of bread. Spread 1 tablespoon preserves on each remaining 2 slices. Put sandwiches together.

2. In a 9-in. baking dish, whisk eggs, milk and vanilla. Place the 2 sandwiches in the dish and let soak on each side.

3. Melt reduced-fat butter or spread in a large nonstick pan over medium heat. Cook the sandwiches until golden brown, about 2 -3 minutes per side. Cut each sandwich in four sticks. Sprinkle the top of each with powdered sugar and serve immediately.

Makes 4 servings, 2 sticks per serving
